Biggest Loser Bloggin' Style - Week One

Scripture for the week: Psalm 118:24

"Today is the day that the Lord has made, let us rejoice and be glad in it!"

I think when I try to focus on doing well for 12 straight weeks, I get overwhelmed! I feel discouraged because I start to carry a burden God didn't intend for me to carry. God says to only think/worry about....(you know the answer) TODAY!!! If I will live today for God, if I will make the most of what God has given me today, if I will live passionately for him today, if I will surrender all of my temptations and fleshly desires to him today, then God will bless my 12-week journey.

Annie Dillard says, "How we live our days is...how we live our lives."
Recipe for the week:
Green Chili Chicken Enchiladas
*1 pound of chicken (I use two cans of Tyson canned chicken, but the recipe calls for 1 lb. of
chicken cooked and diced in 1 inch squares)
* 2 cans of green chili
*one diced onion
*one diced and seeded jalepeno
*one diced red bell-pepper (optional)
*one can of water chesnuts diced (optional)
* 2 Tbsp of chooped cilantro (optional)
*2 tsp of olive oil
*12 corn tortillas
*1 cup of 2 % or fat-free shredded cheese


Pre-heat oven to 350 and lightly coat a baking dish (mine is 7 x11) Dice the chicken in one inch squares and cook until no longer pink. Remove and set-aside (or take the easy way out and just buy the chicken in a can=)Ha! . Saute onion, jalepeno, bell-pepper, chesnuts, and cilantro in olive oil until vegtables are tender. Add two cans of green chili and chicken. (I add a little chili powder, garlic salt, cumin, and pepper to taste) Let simmer for 5 minutes. Place 6 corn tortillas in a baking dish, cover with 1/2 of chicken mixture, and spread half of the cheese over the chicken recipe. Repeat. Cover with foil and let bake for 30 minutes. You can garnish with salsa, diced tomatoes, black olives, and/or fat-free sour cream.

My challenge for all of us this week: Pray!!! We need to ask God to give us the strength we need to be successful . Jeremiah 33:3 says He wants to show us great and marvelous things...we just have to ask!!! I am praying that I won't have an appetite for anything, but God. I love what Psalm 62 says, "...my victory and my honor come from HIM alone..."

Yea - 14 ladies!! That's great - I hope to get around to some of their blogs today! Healthy eating wise - I did pretty well this week (except for last night which I blogged about today! grr) Struggled a bit emotionally and made just a little progress physically - I did some work on the Wii a couple times this week but nothing consistent. I really have fun with the Wii!!

Prayer request: Caleb is getting over pneumonia(sp?) but is doing better and back at school. Please pray for complete healing of his body.
P.S. Week 2 according to the biggest looser tv show, week 2 is one of the hardest ones. I pray that we can all stay committed to getting healthy and, if we mess up don’t give up just keep truckin’!!!

some of you may not know but with the LORD"s help I have made it to my weight loss before this challenge started,however I joined so I would stay accountable to get my gym time in.

So last week-sick
got to the gym twice out of four.
thank goodness I have been healed so, With God's help I will press on today.......My goal is to be FIRM and not flabby.
I also want to be y'alls biggest cheerleader.

Goal-walk at least 30 min a day
Prayer request-to recover quickly from this sinus infection, so I will have energy to excercise.
This week I concentrated on drinking at least 8 glasses of water daily, and I can already tell by my complexion.I also concentrated on portion control, and not eating just to eat. Can't wait to visit the other ladies. Have a great week. Jackie

Week 1 Loss - 0 lbs. (but no gain!)
Goal - to not eat sweets in the afternoon at work (it seems like I always want something sweet after lunch/when I'm stressed out with post-recess kids)
Prayer Request - to be a strong witness in my faith and my commitment to health, especially at work!

Helpful hints: chew a piece of minty gum when you crave sweets or put some toothpaste in your mouth! You never want something sweet when your mouth tastes nice and refreshing!

Works for quitting smoking too! :]

No-Guilt Chicken Pot Pie


1 cup cubed cooked chicken
1 pkg (9oz) frozen mixed veggies, thawed
1 can cambells 98% FF Cream of Ck soup
1/2 cup skim milk
1 egg
1 cup Bisquick Reduced Fat Baking Mix

Preheat oven 400 degrees. In 9 inch pie plate, mix chicken, veggies, and soup. Mik milk, egg and baking mix seperately and pour over chicken mixture. Bake 30 min or until golden brown.

Serves 6- 3 ww points per serving

prayer request -be a Godly mother; that my kids will one day love, trust, and have a personal relationship with God

I have a major sweet tooth (or sugar addiction). In the afternoon, I am always craving candy or sweets. As a teacher it was during my conference time, and now it's during my kids' naptime. I've been chewing sweet gum instead, and that coupled with I haven't bought any candy, has made me successful.

Dawn, thanks so much for doing this! I'm praying for you and all the girls that commented!
