Biggest Loser Challenge - Half-Way Point


Well we are six weeks into our challenge!!!


Way to go...we still have 11 of the 15 signing in...NOT BAD!!!


Well, I have been a HORRIBLE Biggest Loser Host...with our camping, being sick all last week, and the things I've been dealing with in my personal life I have neglected you sweet girls and I apologize.

BUT TODAY IS A NEW DAY.

TODAY is a day God has made and I am rejoicing in each breath. I am so thankful that Lamentations 3 says that because of God's GREAT LOVE for us we ARE NOT CONSUMED for HIS compassions NEVER fail. They are new EVERY MORNING - Great is God's FAITHFULNESS to me.

Recipe for the week:
Doc's Chili
Biggest Loser Cookbook (a must buy)

3 cups of chopped yellow onion
1 1/4 pounds of lean ground turkey (Ronnie couldn't tell the difference between the turkey and ground beef)
1 can (28 ounces) of roasted diced tomatoes, undrained
1 can (15 ounces) pinto beans, rinsed and drained
1 can (15 ounces) black beans, rinsed and drained
1 cup fat-free chicken broth
2 T chopped garlic
2 T chili powder
1 tsp oregano
1 tsp ground cumin
1 tsp mustard powder
1/2 cup black olives (optional)
1/2 cup chopped cilantro (optional)
Coat a large saucepan with a few sprays of olive oil and let onions cook until they are soft. Add turkey and cook until no longer pink. Add tomatoes, pinto and black beans, broth, garlic, chili powder, cumin, oregano, and mustard powder. Bring to a boil, then reduce heat. Cover and let simmer (I let is simmer for about 40 minutes). You can garnish with the olives and cilantro.

Makes 12 servings - 150 calories per serving, 2 grams fat, 5 grams of fiber.

I didn't even work out for 30 minutes last week due to my cold =(
This week I want to get in 5 hours of work out.
I lost 1 pound which brings me to 4.5 pounds for the first six-weeks.
Praise - I am refreshed and full of joy this morning for the first time in weeks. Thank you Jesus.

I did great the week before last and lost weight, but I spent this past week at my mother in law's and she made the best homemade sopapillas I ever had and I gained all the weight back. I haven't ran in 1 1/2 weeks so my goal this week is to run 4 days, drink mucho agua and get back to eating healthy again. Praying for an awesome babysitter for next month so I can take a class at SPC.

Praise: My son was side-swiped by a driver on the way to church yesterday that didn't stop, but he was OK and said you can barely tell where he was hit. Thank the Lord for heavy duty vehicles.
Request: Go to Dr tomorrow for hopefully some good insight as to why I keep having chronic sinus infections, and why I am not feeling well. Dawn I am a discouraging participant I know, but hope my second half will be better than the first. Hope you are feeling much better after last week. Thanks for all of your encouragement. Jackie

To my surprise i have dropped 2 lbs this week for a total of 4 lbs during the Biggest Loser Challenge. Before i started the BLC i had lost 12lbs so this brings me to a GRAND TOTAL of 16lbs. This is the most weight i can ever remember losing! Yea me. How did i do this? Beats the heck out of me. I havent really been trying. I know this may make some girls angry but i guess its just where my body feels its normal is. Making any sense? Whatever, i will take it!!! It put a little skip in my step today!!

Good morning! A new week! Last week I didn’t accomplish a thing! I gained 1 lb! NOT the way I wanted to go. On the upside I spent a splendid weekend with just my husband. Woo hoo! I have started the “Great Cleanout”! Closets & junk & leftover garage sale goodies. My house looks like it was turned upside down & shook. I have to have it clean my daughter gets married the 4th of July & more importantly MY SISTERS will be here on the 1st! My goal till the 4th of July is to have my house spotless!



Since I have been eating EVERYTHING lately..( I do get my shot this week…) I have to put myself back in the negative.. I would like to lose around 2-3 pounds….(housecleaning is a good exercise) now Dawn, you have to know that I don’t always remember what recipes I send you….I don’t think I sent anything last week????(????) I had to quit emailing in a hurry cuz it has been pretty busy at work (end of the quarter)….The recipes for soup that I am sending you are my absolute favorites!! You may think..soup in summer??? But God has given me a super gift. I think so anyway….I have COLD flashes instead of hot flashes…for someone who lives in the desert that is fab! So, I really like my soup for lunches & snacks! The 3 can soup really takes care of any Mexican food cravings I happen to have… cool….really cool….



The Lord has blessed us totally the last week. We signed the contract for Randy’s “Playhouse”. God is so good to us!



I am still praying for my children this week. Shyan & Bob went to Missouri & brought back his children for a month. (they have 5 children between them) I pray they have a great time! Susannah is still having some health issues. I pray she can be healed. Richard is on the road but PRAISE GOD he is working! I pray that he stays safe & healthy. Chip & Amber FINALLY got to move into an apartment in Clovis YESTERDAY!!! I am so relieved they are all together. I pray for a quick adjustment for them.



God has blessed us so much lately.

Cheesy Vegetable Soup



2 lbs of frozen vegetables- your choice—California medley is good

2 cans Fat-Free chicken broth & 1 can of water

1 can of Rotel Tomatoes—it’s up to you how spicy you want it



Dump all ingredients into the pot & bring to a boil. Let simmer for 45 minutes. Add 10oz of Light Velveeta. When it’s melted in, you are ready to eat.



Serving size=1 cup

WW points=1





Quick and Easy Potato Soup



1 (28 oz) bag frozen hash brown potatoes with peppers and onions

1 medium onion chopped (optional)

2 cans fat-free chicken broth & 1 can of water

1 pkg. Pioneer white gravy mix (Fat free)



Combine potatoes, onions, & chicken broth & water and cook until tender. Add gravy mix to ½ cup of water and stir until smooth. Add to potatoes and heat until thick.

Serving/ 1 cup

WW points = 1

Three Can Soup

1 can fat-free chicken broth

1 can fat-free or 98% fat-free refried beans

1 can Mexican tomatoes (Rotel)



Mix and heat!



Serving/ 2 cups



WW points = 1



Broccoli Cheese Soup



2 cans fat-free chicken broth & 1 can water

2 pounds chopped broccoli

10 ounces light Velveeta cheese



Pour broth and water into pan. Add broccoli, cook until done. Add Velveeta; stir often until cheese has melted.

Serving / 1 cup



WW points = 1



Eat these soups with 7 fat free crackers = 1 pt. Regular saltines are 5 = 1 pt







Tip: If I don’t have canned chicken broth…& I seldom do….I use 3 cups of water & 1 chicken bullion cube. Sometimes I don’t use the cube, just the water….

Sorry that I missed last week.

I am just NOT doing well with this. I have felt too busy to focus on eating right & exercising.

My goals this week are:

to walk at least 3 x this week

I need to continue focusing on my water intake - really I just forget to drink it

I have a busy week ahead. I need your prayers that I would not become overwhelmed & BUSY(being under Satan's yoke)

Met my goal this past week.
Decided that if I say I am going to walk 4 days or I am going to lift weight 4 days then I never get it done because I procrastinate and at the end of the week I have not met my goal!
So I am rephrasing:
I will walk 4 to 6 miles daily. And I will lift weights for arm and back strength on Tuesday, Thursday, Saturday and Sunday.
Weight loss: -1/Total loss 15.2
Prayer: praying for God's direction and guidance in my employment!

I guess I am doing "okay" but this is the week I set more tangible goals....just "eating healthy" is too vague for me. So, this week I want to drink 4 water bottles (8 cups) each day and I HAVE to get a scale. I have been trying to use the Wii but that is definitely not working out.

I did have several people tell me this week (completely unrelated) that I look like I'm losing weight. That was encouraging but I would like to have a real number. I do have a doctor's appt. on Wed so that should help.

Prayer request - still for my children...especially my daughter. Thanks for praying. Oh and for the chili recipe. Don't usually eat a lot of chili in the summer but this recipe looks really good!

Can't believe we are half way!!

Last week was VBS for us; needless to say I didn't meet my goal, but had a great week!
weight= no change
goal for week-to make good food choices as we leave Wednesday for CO Springs family vacation for 5 days

Confession time. I did make it to the gym 3 out of 4 last week YEAH. I still hope to get the 4 in this week with no out of town games now.I wanted to thank each of you for praying for me, that means alot to me. I have each of you on my prayer list as well....Have a blessed day and glorify God in all you do....or don't do it.

Okay, I didn't weigh in this week, not intintionally. I was in Ruidoso on Monday, and it hasn't crossed my mind since I have been home. So, we are now to Thursday, so I figured I would wait and weigh in next Monday.
